8-4-12

So lately I've been being held accountable by my friend Holly. While this hasn't improved how I eat completely it has made me re evaluate life. I know I still have a lot of changes to make, but for today here is my food journal. Since she lives 400 mi away I decided to start sending her pictures of what I'm eating. Breakfast: Shakeology Snack: banana Lunch: left overs,gold fish,grapes, Pepsi Dinner: Tacos with low Carb tortillas., My demise of the day was the gold fish. Even after I got home they called out to be eaten. (sigh) Here were yesterdays:

So today wasn't the day

Ever get so excited and jazzed about something you think that's it. I got this! Well clearly we all lose it. Shortly after I started this blog I fell off the bandwagon... Again! See everyone goes through it I went through to the point I've gained weight. I don't know how I did that. I was at the same weight for so long. Well summer an the madness is almost at an end. I go back to work this week and the next week I get back on a schedule. (I hope)

What's the plan you're asking me? Well Sundays are for no one other then my family and getting ready for the week. This is my new must if I am to get on track. We will ore pack food for lunches such as almonds, crackers, grapes... snacks in general. Also I'd we want to pre cook anything like chicken or rice. Then I want to plan the dinners for the week. This way we can also plan left overs. Also no longer am I allowed to drive to get my daughter. She has daycare a couple blocks from my house. So unless it's in the 90s like it currently is I need to be walking. I also want to try to wake up early enough to walk the dog every day. Wish me luck!

First Taste of Freezer Meals

So last night we made our first freezer meal. I have to say the taste of it was yummy. My 2 things I will change for next time is 1, I will add more chicken to the dish because I felt it needed more and 2, the veggies, especially the potatoes, were REALLY mush. So I think I will shorten the cooking time. or keep the sauce.meat seperate from the veggies so I can dump the meat and sauce in first and add the veggies when there was about an hour left. Also ate my first Frozen breakfast sandwich today. Now I know most people freeze them with the english muffins. Maybe since I did double fiber bread that was the difference, but next time i will be freezing it without the bread. Bread was really fresh and soft when I froze it and so it got soggy during microwaving. Otherwise it tasted fine. :) Below I will add the 2 recipes of what I've tried with my modifications and the link to where you can find the original recipe. Happy freezing!

3 medium unpeeled sweet potatoes, cut into 1/2 inch pieces, about 2 cups.
2 large green pepper, cut into strips or cubes, about 2 cups.
1 large red pepper, cut into strips or cubes, about 1 cup.
2 zucchini, chopped, about 2 cups.
2 cups chopped onion.
2 tablespoon quick cooking tapioca (or flour, or some other thickening agent).
3 pounds chicken thighs
2 15-ounce can of tomato sauce.
4 tablespoons packed brown sugar
2 tablespoons Worcestershire sauce
2 tablespoon ground yellow mustard.
2 clove garlic, finely minced, about 2 tablespoons.
1 teaspoon salt

Dump meat and seasonings (everything except veggies) into 2 1Qt bags, shake both up, seal. Then place qt bags and veggies into two, one gallon freezer bags, label and put in the freezer. Day of cooking, dump it into your slow cooker and cook on high for 4, or low 6, depending on your specific slow cooker.

Breakfast Sandwiches

4 eggs scrambled and seasoned to your liking

4 pieces Canadian Bacon

4 thin slices of Chedder Cheese

In a small pan cook eggs (will take the shape of pan) once cooked you're left with a large circle cut into 4ths divide equally wrap in saran wrap and put in Gallon freezer bag in freezer. Re-Heat for about 45 sec add to bread of choice.

Weigh in for the week

Well I don't remember if I weigh myself at night the first time or what have you, but after weighing myself this morning I'm happy to say I'm down 4.4 lbs! I just had to share before I started my day. It feels good in the sense that it's gone, but I don't feel any different then any other normal day. I guess if I stay on this path though that will come when my close stop fitting, in a good way that is. I will be affective this time. I will make the needed change!

Feeling Good!

So today has been a good day I am definately on track with my calories (burned and eaten) got more then enough of my activity in and rocking the step count. Feeling really good about the day in full! Hopefully tomorrow goes just as well. :)Tomorrow I should weigh myself since I haven't done that this week although I doubt there's much difference since last week I was only going through the motions. Goal for this week is more water in my diet, less soda, and shakeology even on weekends.

Rocking the crock pot!

So today my husband and I did "freezer cooking" I'm so excited about trying this out. We made 5 different recipes in 10 different bags so all I have to do now in the morning is throw it into a crock pot and come home to a fully cooked meal. No prep, no huge mess in the kitchen...We also made 8 breakfast sandwiches that I used to eat when I was pregnant so I know it keeps my blood sugar in check. I feel totally ready to rock the diet this week. Also cut up 7 baggies of veggies for lunches! Take THAT fat me! lol

Week 1

Well it's been a week. I have started by trying to count calories and work out more. I am also drinking my Shakeology. I love it because at least I know I'm getting all my vitamins I need. I feel like it's a good start, but it's not going to be enough to get me down 50lbs by August. So this next week I really need to step up my game, stop making excuses. I have done my Slim in 6 twice. Both time I got about 12 min in before the burn made me quite. The second time I may have lasted a bit longer, but I had a 2 year old thinking that running through mommy's legs was a fun workout on her own. (sigh) Also no more being lazy and not walking to get the baby. Especially if this good weather holds up. Although rain is in the forecast. I will weigh on Monday and update pictures once a month. Thanks for the support!
