So today wasn't the day
What's the plan you're asking me? Well Sundays are for no one other then my family and getting ready for the week. This is my new must if I am to get on track. We will ore pack food for lunches such as almonds, crackers, grapes... snacks in general. Also I'd we want to pre cook anything like chicken or rice. Then I want to plan the dinners for the week. This way we can also plan left overs. Also no longer am I allowed to drive to get my daughter. She has daycare a couple blocks from my house. So unless it's in the 90s like it currently is I need to be walking. I also want to try to wake up early enough to walk the dog every day. Wish me luck!

First Taste of Freezer Meals

3 medium unpeeled sweet potatoes, cut into 1/2 inch pieces, about 2 cups.
2 large green pepper, cut into strips or cubes, about 2 cups.
1 large red pepper, cut into strips or cubes, about 1 cup.
2 zucchini, chopped, about 2 cups.
2 cups chopped onion.
2 tablespoon quick cooking tapioca (or flour, or some other thickening agent).
3 pounds chicken thighs
2 15-ounce can of tomato sauce.
4 tablespoons packed brown sugar
2 tablespoons Worcestershire sauce
2 tablespoon ground yellow mustard.
2 clove garlic, finely minced, about 2 tablespoons.
1 teaspoon salt
Dump meat and seasonings (everything except veggies) into 2 1Qt bags, shake both up, seal. Then place qt bags and veggies into two, one gallon freezer bags, label and put in the freezer. Day of cooking, dump it into your slow cooker and cook on high for 4, or low 6, depending on your specific slow cooker.
Breakfast Sandwiches
4 eggs scrambled and seasoned to your liking
4 pieces Canadian Bacon
4 thin slices of Chedder Cheese
In a small pan cook eggs (will take the shape of pan) once cooked you're left with a large circle cut into 4ths divide equally wrap in saran wrap and put in Gallon freezer bag in freezer. Re-Heat for about 45 sec add to bread of choice.
